Tagliatelle with fresh peas, crispy bacon and Almivisi Punto Rosso | STEFANIA’S COOKING CORNER
Ingredients ofr 4 People
350 gr of fresh peas
100 gr of shredded bacon
60 gr of Almivisi Punto Rosso wine
500 gr of fresh tagliatelle.
Salt and Pepper as needed.
Boil the peas in plenty of salted water and drain them without throwing the water away. Half the quantity of the peas will go in the mixer to make a cream.
Cook the bacon separately for about 10 minutes until crispy.
In a pan, reduce the wine by cooking it for approx. 5 minutes then add the pea cream, salt and pepper and oil.
Cook the pasta in the water where you previously blanched the peas for 4/5 minutes, adding a little cooking water to the mixture. Once ready, add it to the pea cream together with the rest of the fresh peas, and the crispy bacon, mixing everything well.
Our tagliatelle with fresh peas and crunchy bacon are ready.
