Ingredients for 4 people
450gr gr of veal escalops
10 gr di fresh parsley
70 gr Qortè wine
40 gr veg. broth
Olive oil as required.
Flour as required.
Salt as required
Pepper as required
We first flour the veal escalops and then brown them in a pan for a few minutes with some olive oil we heated in advance. Blend them with the white wine and let the alcohol evaporate.
Add the broth and adjust with salt and pepper cooking at medium heat for 2- 3 minutes, turning the escalops till the juice congeals, then put out the fire add the parsley and let rest a few minutes.
I accompanied this dish with seasonal green asparagus, baked in the oven at 170 °C with salt pepper and olive oil for 20 minutes and of course a glass of Qortè.
